Egg Wraps with tomato, avocado and cheese

Ingredients
- Ingredients for 1 wrap
- 1 egg
- ½ avocado
- 1 tomato
- soft spreadable cheese
- chopped parsley or coriander
- sunflower margarine
- lemon juice
- salt, pepper
Instructions
- Beat the egg in a plate
- Add the chopped herbs, salt and pepper.
- Lightly butter a pan and cook the egg both sides as thin as you can.
- Let it cool for a few minutes on a plate, then spred some cheese, add a very thin layer of tomato and avocado (drizzle the avocado with some lemon juice to prevent ossidation).
- Wrapt it up then cut as you wish and serve it.
