Egg Wraps with tomato, avocado and cheese

  • Ingredients for 1 wrap
  • 1 egg
  • ½ avocado
  • 1 tomato
  • soft spreadable cheese
  • chopped parsley or coriander
  • sunflower margarine
  • lemon juice
  • salt, pepper
Instructions
  1. Beat the egg in a plate
  2. Add the chopped herbs, salt and pepper.
  3. Lightly butter a pan and cook the egg both sides as thin as you can.
  4. Let it cool for a few minutes on a plate, then spred some cheese, add a very thin layer of tomato and avocado (drizzle the avocado with some lemon juice to prevent ossidation).
  5. Wrapt it up then cut as you wish and serve it.
